the best of traditional Dalmatian Cuisine
The Mediterranean diet is among the healthiest in the world. Not surprisingly so, since it involves a lot of fish, vegetables, olive oil etc. And healthy does not mean ‘yuck!’ in this case. Dalmatian cuisine includes the best of the Mediterranean way of cooking, but it also incorporates elements from the Dalmatian hinterland and Croatia in general. It’s all about indulging in excellent food moderately, according to the carpe diem (‘seize the day’) way of life.
Peka is a famous Dalmatian dish of vegetables and meat or seafood—lamb and octopus are favorites. Ingredients are placed in a covered pan and roasted in the embers of an open fire. This traditional method of cooking is referred to as cripnja (“under the bell”) because the pan’s lid is often bell-shaped.

Gregada

  • ⅓ c. Extra Virgin Olive Oil
  • 1 medium White Onion, thinly sliced
  • 4 medium (about 1½#) Yellow Potatoes, peeled and thinly sliced
  • 4 cloves Garlic (left whole and unpeeled)
  • ½ c. Grape Tomatoes, halved
  • 2 whole Mediterranean Sea Bass, cleaned, scaled, and cut crosswise into halves
  • about ½ bottle Dry White Wine
  • 2 sprigs Fresh Rosemary
  • 1 Dried Bay Leaf
  • 1 small bunch Flat Leaf Parsley, chopped

Scampi buzara

  • Scampi – 1.5 kg
  • Olive oil – 150 ml
  • Tomatoes – 2
  • Garlic – 6 cloves
  • Parsley – 2 teaspoons
  • Breadcrumbs – 2 teaspoons
  • White wine – 200 ml
  • Sea salt
  • Pepper

Dalmatian Brodetto (fish stew)

  • 1 kg (2 1/4 lb.) assorted fish
  • 125 ml (1/2 cup) olive oil
  • 1 onion
  • Parsley
  • Garlic
  • Salt and pepper
  • Fresh tomatoes
  • 1 big spoonful of tomato paste
  • Vinegar
